Yesterday was a busy day for me. I woke up early to work on some blogging items, and then remembered, “Oh crap! I have to measure myself for my sari!” Yep, I almost completely forgot to send my friend the measurements for my bridesmaid sari. Part of it, I’m sure, was because I was dreading to see the numbers, but it had to be done. I decided to look on the bright side and think of how convenient it will be to have measurements to compare myself to in a few months. My boyfriend helped me, which was pretty hilarious, and even though I wanted to cry when I typed up the measurements into an e-mail, I sent the numbers on their way.
We then headed off to lunch with another one of my friends, who recently got engaged. I have known her since Kindergarten and we used to mark up bridal magazines together in middle school, so it was pretty exciting news. I was even more excited when we got to her apartment and she asked me to be in her bridal party! I joyfully accepted, and now I have another wedding to prepare for! Extra motivation if you ask me. 🙂 We headed out for lunch, but unfortunately everywhere we attempted to go was closed, so we were stuck with Applebee’s…. Ugh, I know, but I was only craving a burger, and I could easily ask for no bun. I ended up getting their Philly Burger without a bun, which was surprisingly delicious! I managed to say no to the appetizer sampler my friend had ordered, and stuck to just one margarita. We had a great time and I didn’t feel guilty about what I ate.
After saying our goodbyes, my boyfriend and I headed to my parents house for my belated birthday celebration. I turned 25 a few weeks ago, but we were in San Diego so we never had a chance to celebrate with my family. My dad loves to cook and feed people, so we began with a snack of buffalo chicken dip and some veggie chips. My parents don’t eat Primally, but they try their best to be accommodating to me and my bf. I had asked my dad to prepare stuffed pumpkin for us, which is one of my all time favorite meals.
Oh yes, yum yum yum, look at that beauty. The way my dad makes stuffed pumpkin is by roasting a hollowed sugar pumpkin until it is a little soft. Then he fills it with meat stuffing, which is similar to the filling of a French Canadian meat pie. He typically makes it with ground beef, onions, white potatoes, and bell seasoning. Then he roasts it in the oven even longer, and out comes a steamy edible bowl of deliciousness. We actually ended up not having any last night because he had made Chicken Francaise, since my mom hates stuffed pumpkin. Alongside the chicken we had sautéed spinach with garlic and some mushrooms. No birthday cake was necessary since we were completely stuffed.
This morning I made some chicken, spinach, and mushroom omelettes with all the left overs we have. They were scrumptious! I plan on hula-hooping today as well as getting some squats and push-ups in. Sadly, tomorrow is Monday, so I also want to prepare some lunches for the week ahead, that way I am not tempted to go to Dunkin Donuts at all, lol.
