So, I began my Whole 30 adventure this Wednesday, and so far it is going really well. I know it has only been 2 days, but I am feeling good about the healthy choices I have been making! Day 1 I was really motivated to get started so I wasn’t craving anything naughty, but day 2 I really wanted some kind of a cookie, lol. Obviously, I didn’t give in because that would have been an epic fail, but I did complain a few times to my boyfriend about it :).
What has been really helpful is having food prepared. I made a couple of dishes in advance so that if I was hungry, I wasn’t tempted to go out and get something at a restaurant. For me, that is my weakest time; when I get home from work and am pooped out, and I just want to eat immediately. Having the food all ready to pop into the oven has been such a help. Normally we would just go out eat if that were the case, but now we can’t justify it as much.
I have also gotten back into hula hooping, which is great since it has been blizzarding here. My boyfriend and I enjoy having work out activities to do in our home, that way if we don’t want to go out into the cold, we have no excuses. I have also started to do that Tai chi video I was telling you about. It makes my muscles a lot more sore than I expected! Overall, I am really happy with how I have been progressing so far. So let me show you what I have been munching on this week!
Day One: We had stayed over my parents house on New Years Eve, so day 1 we didn’t get home until 12-ish, therefore I just ate a banana with some almond butter as my really late breakfast. For lunch though, I was in a cooking mood. Tom had gone out to hang with one of his friends who was visiting, so I decided to take the opportunity to experiment in the kitchen. First, I created a simple 5 minute spinach pesto to go along with some zucchini noodles.
For the pesto, I put 2 cups of organic baby spinach, 4 garlic cloves, 1/4 cup of pine nuts, and 1/3 cup of extra virgin olive oil in a food processor. I wizzed it around until it was nice and smooth and a beautiful vibrant green, and then seasoned it with salt and pepper to taste. I cooked the zucchini noodles in chicken broth and then tossed them in the spinach pesto. I did this over the heat so that the garlic in the sauce would cook a little, and not be so spicy. Next, I caramelized 1 yellow onion and 3 cloves of minced garlic in coconut oil, and tossed in 3 chicken breasts that I had cubed. Let me tell you, it was DELICIOUS! Somehow when I cooked down the onions and garlic with the chicken, it almost turned into a caramelized onion jam, which tasted amazing.
I wasn’t that hungry when it came to dinner, so I decided to make a quick egg bake. I preheated my oven to 375, and then whisked 6 eggs together. In a 9×9 baking dish that was greased with coconut oil, I laid down a bed of baby spinach, and poured half a can of organic diced tomatoes on top. Then I poured the eggs into the dish, seasoned it with some Adobo and pepper, and then mixed it together so everything was evenly distributed. I baked this for about 40 minutes until the center wasn’t jiggly and when I stuck a knife into it, it came out clean. This is a really easy meal to make when you are out of ideas, and it works for any meal of the day. Just grab whatever is in your fridge, and throw it in! We finished the night off with the newest Wolverine movie and some cashews, yum!
Day 2: I had to go back to work on Day 2, so I packed a lunch. I don’t usually eat breakfast on a work day, so I brought a clementine and a banana to choose from if I got hungry. For my lunch, I brought some left over zoodles with chicken, and a little bag of mixed nuts. A lot of snow was forecast, and since I work in a doctor’s office setting, there were hardly any patients. I ended up eating the clementine and the nuts, and was sent home early due to the weather (yes!). When I got home, I ate the rest of my lunch, except for the banana. For dinner, I was planning on having this Butternut Squash Shepherd’s Pie (recipe coming soon!) that I had created this past weekend, but unfortunately it was still frozen. In it’s place, I had some of the egg bake and a little of the chicken and onion mixture. It was completely easy, satisfying, and deeeelish.
Later in the evening, I got the munchies, so I had a banana with almond butter along with a cup of black coffee. Drinking coffee doesn’t affect my sleepiness, so don’t worry, I didn’t stay up all night. Although, I have to say I wanted to! The snow was coming down really hard, and we were playing the Lego Harry Potter Years 1-4 video game, and I DID NOT WANT TO STOP! That game is dangerous. I hate video games, but wow, that one is so much fun. If you are ever looking for something to do on a lazy day, I highly recommend it, haha!
