Whole 30 Days 11&12

Hi everyone,

The weekend is almost over 🙁 SO depressing. To make it even more depressing, I finally was able to see the series finale of “Dexter”, so I am like, super depressed. Ugh. Sunday nights are the absolute worst! Nevertheless, I had a nice weekend, so I can be happy about that. We really didn’t end up eating too much this weekend, which is nice I guess. We haven’t had a good workout in a couple of days, so it’s not like I am depriving my body of energy that it needs or anything, I just haven’t been in the mood to eat. I feel like I am a lot less hungry than I used to be, which to me is a great thing, lol.  Let’s see if I can remember what I actually did eat this weekend.

Day 11: Our plan for the day was to hang out with a few of my best friends for the late morning/afternoon, and then go grocery shopping in the evening. I didn’t end up eating anything for breakfast because I wasn’t in the mood, and I thought perhaps we might get something once at my friend’s house. Tom had a banana to hold him over, and I brought some raw cashews and raisins for a snack. Once at my friend’s house, we just chatted, played with their puppy and half-watched “Muppet’s from Space”… so random, lol. We didn’t end up eating anything, so when we finally left, Tom and I were pretty hungry. We decided to stop at Ted’s Montana Grill again, since it was 4:30ish and I hadn’t eaten anything since the night before (except for my snack that I’d brought). I ended up getting the same delicious bison burger with mushrooms and avocado I had gotten last time, but this time I had sweet potato fries instead of veggies. The burger was delicious, but the fries were meh… I probably won’t be getting them again.

Once we were done eating, we decided to head to Whole Foods to grab a few things. We typically do our shopping at Trader Joes, because it is down the street from our home, but since we were in the neighborhood, we stopped at Whole Foods too. We ended up getting some guava kombucha, some dried organic unsweetened mango, and some plain unsweetened almond milk. I had tried kombucha once before because one of my clinical preceptors makes her own and let me taste hers. I wasn’t that big of a fan, but I wanted Tom to try some to see if he liked it. The guava one tasted really good actually, it’s just the smell that gets me. I absolutely hate vinegar, and that is exactly what kombucha smells like, but I am willing to give it a try now that I know it can taste so good. After successfully avoiding spending hundreds in Whole Foods, we went to Trader Joes and finished the rest of our shopping for the week.

At home while browsing some apartments in San Francisco, we snacked on some of the dried mango, which has quickly become one of our new favorite snacks. It is so yummy! Later in the evening we saw that the last season of “Dexter” was finally up on Netflix, so we spent the rest of our evening watching that. I ended up having a little of the steak and veggie mixture I had made the day before, because I was hungry for something savory. The night ended with us staying up way too late watching the show and then going to bed.

Day 12: Today we slept in pretty late, since we had stayed up so late the night before. We had some filet mignon in the fridge that we were supposed to have for dinner last night, but since we ate our “lunch” so late, we decided to eat it today instead. Steak and eggs is one of my favorite meals, and it weirdly, makes me think of when Tom and I first started dating. We went to Atlantic City for one of our dates and ended up eating dinner at this random place at like 10pm and had steak,eggs, and beer. It is such a random thing to remember, but every time I eat steak and eggs now, I think of that night, lol. Tom decided to take control of the kitchen and cooked the steaks and some onion and garlic to top them with. I was in charge of the scrambled eggs, and we ended up  having a little sweet potato “pancake” each too. The meal was absolutely scrumptious, and oh so filling! I was stuffed for most of the day after eating it.

I did snack on a tangerine and some mango strips much later in the day while we finished up “Dexter”. Like I said earlier, we were really inactive this weekend, exercise wise at least. I was really hungry after we finished the show and I felt really light headed too. I didn’t know if it was because of the coffee I had with my breakfast, or because I didn’t eat enough, so I decided to cook a late dinner. I sauteed some garlic in coconut oil, and then added a can of full fat coconut milk to that. I sprinkled some arrowroot powder, salt, pepper, and garlic powder into the mixture and let it thicken up. Next, I added some diced tomatoes and some chopped basil to make a creamy margherita sauce. I made some zoodles out of 2 zucchini and cooked them in the sauce. We had one steak left over from breakfast, so I sliced it up and Tom fried it up in coconut oil for me. It was pretty tasty, but I think I needed to add more arrowroot powder and salt to my sauce, as the zucchini ended up watering down the texture and flavor.

I plan on spending the rest of the night working on blog posts and  having a caramelized banana with melted almond butter. I am still kind of light headed, so I am hoping the extra sugar helps. I have been chugging water for the past few hours, so that should help too. I can’t believe how late it is already… ugh. Monday will be here before I know it, and I hope it goes by quickly. I hope this whole week whizzes by really, because I have some exciting plans for this coming weekend! I will talk to you guys in a couple days, so have a great Monday yourselves!
