Hope I didn’t bore you all too much with that lengthy post yesterday. Today’s will be much shorter as I get back into posting every 2 days.
Day 20: Mondays are the worst. Mondays when your boyfriend has the day off and you don’t, are even more worse. Unfortunately, I had to work on MLK Day, because the hospital doesn’t allow more than one holiday per month. That is a dumb rule if you ask me! Anyways, I headed into work feeling reeeeally overly emotional about life in general. I am super stressed out about finding a job after I graduate, and trying to coordinate moving to San Fran that I just become an emotional wreck way too easily. I had a few moments where I teared up throughout the morning, but by lunchtime I was feeling a little better. For lunch I brought some leftover steamed zucchini with the rest of the caramelized onions and roasted garlic I made for the filets. I also brought a tangerine, some nuts, and some celery with almond butter. Overall, I was unimpressed, but that was literally all we had in our fridge.
Thankfully, Tom went grocery shopping while I was working, so now we are stocked. I texted him during the day because I got th most random craving for meatballs. We decided that was what we would make for dinner. He chopped up some onions and garlic for me so that when I got home I could just get to mixing. I combined this with a pound of ground beef, 1 egg, about a 1/3 cup of almond meal, and a bunch of seasonings. I rolled the mixture into 2-inch balls and baked them at 375 for about 30 minutes. Before they were done, we poured some Whole 30 approved canned tomato sauce in the pan so that it would warm up. To go along with the meatballs, I made some hard boiled eggs. The meatballs came out really good! Usually I put in too much onion powder but this time I made them just right.
After dinner, we caught up on “The Killing” season 3 on Netflix. Oh my God! That show is so ridiculously good. I was sobbing watching one of the episodes, my gosh. I was completely emotionally drained after that, so I went to bed.
Day 21: Today I made myself an iced coffee to take to work with some almond milk. I was greeted by unexpected patients, as usual, so I wasn’t able to get as much done as I had planned. I did, however, get to re-schedule some of the evening patients, because it was going to blizzard today. When lunch came around, I had a leftover meatball and a pear. Doesn’t sound like much, but oh man, Tom managed to buy the biggest pears I have ever seen. They must not be organic, because I swear, this one pear weighed 2 pounds. It took me forever to eat, and I couldn’t even finish the whole thing. I snacked on a few nuts and raisins later on, but that pear really kept me full.
I ended up leaving work around 4:00pm so I could try and avoid as much snow traffic as possible. Thankfully it wasn’t too bad yet, but you could tell it was going to be a lot worse fairly soon after I got home. I had put 2 pork tenderloins in the crock-pot this morning to make pulled pork for dinner, so the apartment smelled amazing when I walked in. I seasoned the pork with a bunch of adobo, garlic powder, salt, pepper, and a little onion powder. I smashed 8 cloves of garlic and put them in the pot along with a mixture of beef broth and water. To go with the pork, I cut up some broccoli, tossed it in coconut oil and adobo, and roasted it at 400 for 20 minutes. It was so good, and the best part is there is a bunch leftover for lunches.
I spent the rest of the evening trying to catch up on my blogging! I missed so many days, and I am sorry. I will be trying to get back into being more consistent again. We also finished up season 3 of “The Killing” and I am dying to see season 4! That show is seriously amazing if you haven’t seen it yet. My little brother is actually the one who recommended it to me. After we finished up the show, I painted my nails with Zoya’s “Dream” which was featured in my 2013 favorites. Once they dried, it was time for bed!
