Sorry it has been SO long! It’s been a rough past few weeks. I currently have a sinus infection which was turning into bronchitis, but thankfully I got medical treatment before that happened. Tom and I have also been very frugal with our grocery shopping the past few weeks, so I haven’t been cooking anything new or exciting. And now that I have been sick for the past week, I definitely did not cook anything at all.
One meal that I did cook this past month was bacon wrapped chicken thighs, and since I haven’t posted anything recently, I thought I would share the recipe. They are really simple to make, and could easily be dressed up to increase their flavor punch. These would be delicious stuffed with some Kerry Gold cheddar cheese and slow cooked onions, or maybe some mushrooms, shallots, and goat’s cheese! The boneless skinless chicken thighs that I used are perfect for stuffing, and their shape allows them to be wrapped in bacon just as easily. To go along with the chicken, I served some sautéed spinach and sliced avocado. It was delicious, and even Tom, who isn’t a fan of chicken thighs, enjoyed the meal!
I hope you all enjoy this recipe idea and have been doing well. I know I said I was starting the 21-Day Sugar Detox this month, which I kind of did, but since I was sick and we hardly went grocery shopping, I was unable to meal prep. I did try a couple of recipes from the 21 Day Sugar Detox book, like the “Banola” and “Avo-nana Smoothie”, which were both winners. I plan on restarting it this week, as I will actually be able to meal prep this weekend. I will let you know how I get on, and stay tuned for spring-themed nail art too, as I have a bunch lined up for you guys!
Bacon Wrapped Chicken Thighs
6 pieces of uncooked nitrate free bacon (I used thick cut)
6 boneless, skinless chicken thighs
1 tsp coconut oil
A blend of seasonings (I used onion powder, granulated garlic, paprika, sea salt, and pepper)
Begin by preheating the oven to 375º. Lightly grease a baking dish with the coconut oil. Rinse and pat dry the chicken thighs and place them onto a cutting board to be seasoned. Sprinkle the desired amount of seasoning onto the chicken, and massage it into the meat (don’t be afraid to season them well!). Flip the thighs over and repeat. Fold each piece of chicken in half and wrap one piece of bacon around each. Place each bundle in the baking dish with the bacon ends tucked under the chicken. Once all the chicken is wrapped, place the dish in the preheated oven and cook for 30 minutes. Then place the chicken under the broiler for 5-10 minutes or until the bacon is crisp. Be sure to keep an eye on it while broiling to prevent burning! Once the bacon is crisped to your liking, remove from the oven and serve them up with your favorite side dish. Enjoy!
