April Meal Inspiration

Hi everyone,

As April draws to a close (I can’t believe it!), I wanted to share with you some delicious meals we have been enjoying. I haven’t had the time or energy to really experiment a whole lot this month, but I still wanted to share with you the few dishes I did create.

First off, I have had an obsession with avocado this month! I used to hate it, but slowly and surely I am now obsessed just like every other smarty pants on this planet! I had the bright idea of making an avocado cream sauce to go on top of cauliflower rice. I had a few chicken breasts in the fridge, so I cooked them in the crockpot with some garlic and seasonings, and then shredded them for the meal. The sauce turned out awesome, but I have to perfect it some more before I post the recipe. I was afraid the color would turn too, as avocado’s typically do, but it stayed a nice green color in the fridge for days after. To add a little salt and extra yumminess to the dish, I of course topped it all off with BACON! lol

Another meal that Tom and I really enjoyed was some wild caught sea scallops we picked up at Trader Joes. We pan seared them in Kerry Gold grass-fed butter, and I made some green beans with bacon for the side. It was super quick, easy, and delicious.

The most recent dish that I came up with starred a new ingredient for me: cilantro. I was inspired by my new love, avocados. I thought that some cilantro lime chicken breasts would go perfectly with avocado and cauliflower rice. By the time I was actually ready to make the dish, however, I had used up all my avocados and was too lazy to go out and get more, lol. I made a tasty marinade featuring lime juice, cilantro, and a few other ingredients, and let the chicken absorb all that deliciousness. Then I pan seared the chicken breasts until they were a beautiful golden brown. I cooked my cauliflower rice in the chicken drippings and butter, and it was all fantastic. I will post the recipe for this dish as well, once I have experimented more. I basically threw a bunch of stuff together and prayed for the best, haha!

Well, these are some of the meals I have been munching on this past month. There’s been a lot of eggs, leftovers, and picky meals lately. As I said in my last post, I just have been so uninspired lately, but I am hoping that will turn around soon. With graduation and moving coming up, it is SO hard to stay on track!
