It has been forever and a day since I have last posted, but as you guys know, I have been CRAZY busy the past 2 months. Sorry about that. I wanted to give you a little update of what has been going on and share some photos with you!
May was extremely busy because I was finishing my externship for school, getting paperwork together for graduation, graduating, and then getting paperwork together for my state licensure and moving across the country. Oh yea, we were also packing almost everyday, and I was trying to squeeze in visits with all my friends and family before we left! It was extremely stressful to say the least, and I ended up gaining all of the weight back that I had lost on my Whole 30 and then some… womp, womp, womp. Why is it so easy to gain weight and not to lose it?!?! Ugh. Anyways, in June I had my amazing graduation party thrown by my parents, more family get-to-gathers, including my older sister visiting from Florida, more packing, and lots more eating. Then finally it came time to move.
Tom and I had decided to try out best to use the trip as a detox from all the non-Paleo things we had eaten over the past couple months. I went out shopping for snacks for our cooler and this is what I came up with: a super pack of Columbus Salami, some colby jack cheese sticks, some crackers made from almonds, dark chocolate almond bark (for when we craved something sweet), and Larabars. In the end I was SO happy we had gotten these snacks because we were driving 12-17 hour days and to have to stop to eat more than we did would have added so much time and money onto our trip.
We did stop a couple of times while at gas stations, and picked up some more snacks or food in general. One day in Salt Lake City, we stopped at a Travel Center and we were starving. I ended up getting some cashews, kettle cooked potato chips, and a hot dog without the bun. Tom ended up going to Burger King and getting a burger without the bun. That was pretty reasonable considering our options. We did make a couple bad choices as well, like when we stopped in Ohio and were really craving ice cream. We ended up each getting a novelty ice cream treat, but we enjoyed it and moved on. However, then one night in Wyoming, we had dinner at an Outback Steakhouse and ended up getting some food to have for breakfast the next day as well as dinner. I ended up getting a baked sweet potato to go, and ate that in the morning so I wasn’t tempted by the free waffles in the lobby. Overall we didn’t do too bad for being trapped on the highway for 4 days.
We stopped in Lake Tahoe on our last real day of the roadtrip, and stayed at the Ritz Carlton, which was AMAZING. So beautiful, and relaxing! We got room service that night because by the time we got there the restaurants were closed, and then the next morning we had lunch at the new BBQ place they opened. We both had some amazing smoked pulled pork with super thinly sliced kettle chips. It was delicious and the perfect meal to get up energized for the final leg of the trip.
That day we headed to Tom’s Uncle’s house which is about an hour from our new apartment. We ended up staying with them that night, and had dinner at their house. The next morning we went to The Cheesecake Factory for breakfast, and I splurged big time. I haven’t had waffles in I don’t even know how long. They had these peanut butter, banana, and bacon, Elvis waffles, and I just had to get them. We never eat there, and it was my last hurrah before getting back on the wagon completely. They were well worth it, to be honest. Anyways, after that we headed to our new home!
We finally made it to our apartment and absolutely loved it, and still do. Minus the construction going on on neighboring buildings (that we were never told about before signing the lease) it is perfect! The area is outrageously beautiful, and we are so close to everything. Trader Joe’s and Whole Foods are everywhere out here, although, I do want to find a farmer’s market for us eventually. Once we moved in, we made sure our grocery trips were treat free. We went to Costco and Trader Joe’s the first or second days, and stocked up on some essentials so that we wouldn’t be forced to dine out for every meal while settling in. We ended up eating a lot of sliced chicken breast with pesto or salsa. I posted most of what we were eating on my Instagram account actually, so head over there if interested.
We did try In-and-Out Burger for the first time, and Tom had his protein-style, while I tried a Flying Dutchman. It was extremely delicious, and we have been craving it since. We also found an epically delicious Thai restaurant near us, and a pizza joint that delivers gluten-free pizzas for nights that we are really lazy. There is even a Chipotle right down the street! Although we are surrounded by delicious eateries, I have been trying really hard to get back on track. I still have my friends wedding coming up on the 4th of July, and I am nowhere near as fit as I thought I would be last year….
Stress really is a bitch! Instead of stressing over it now though, I am just doing the best that I can. I made PaleOMG’s Almost 5-Ingredient Pizza Spaghetti Pie one night, which was a huge hit and super easy. Another night I cooked a whole chicken in the crock-pot and paired it with some creamy mashed cauliflower and sautéed spinach and onions. The leftovers have been holding us over for the past week. I have also been trying to work out everyday, whether it be jumping jacks and push-up-planks throughout the day, or going on walks, I am just trying to get my body active. I have lost about 1 pound a day this past week, so thankfully the weight I gained seems to be coming off easily. If I can keep it up until the wedding I will be a happy camper.
So, that is what we have been up to. Pretty busy! I am getting my new car today, have my friends wedding in NJ next weekend, and then I start my new job the 14th! I am going to brunch with some of my new co-workers to meet them tomorrow morning… Yikes! I am kind of nervous… lol. I checked out the menu already though and I won’t have to worry about what I will be eating at least. I hope they like me!! Well I am going to go for a walk now. If you made it this far, good for you, this was a long one. I am hoping to get back into my regular posts starting next week. Right now I don’t have a table to paint my nails on, so I haven’t been doing that, and we still don’t have all of our cookware. Don’t worry though, I will be back!
