Meal Inspiration 8/25/2014-9/1/2014

Hi all!

I have started to cook again! FINALLY! Tom and I have really gotten back on the wagon and started eating right again, which means less eating out and more cooking. I feel like I always have more inspiration and desire to cook in fall and winter than I do during the summer. Since there season of pumpkin is right around the corner, that desire has returned šŸ™‚ Here are a few different meals that I made over the last week or so. Hopefully this gives you a little inspiration for meals in your own kitchen!

What do you think? My favorite meal was definitely the spaghetti squash “lasagna” we concocted. I had the idea randomly one morning and Tom and I worked together to create, seriously, one of the best meals we have ever made! I can’t wait to make it again and actually pay attention to how we made it so I can share with you guys. When it comes to work lunches I have been eating nitrate-free deli chicken rolled with arugula and EVOO, carrots with cashew or sunflower butter, nuts, and apples. Simple and delicious. What have you guys been loving lately? Any recipes you think I should try?
