I started a new workout program a couple of weeks ago through Beach Body called, “Brazilian Butt Lift”, and it has been kicking my butt (pun-intended!)! So far I have lost 5 pounds and 2 inches off my waist!! I am pretty happy, because there are still 6 weeks left in the program, so I should see a nice transformation by the time I am done. Anyways, I have been trying to meal plan for the week to help keep me on track, and so far it has been working great! However, I have found that my appetite has increased due to the frequent workouts, and that has resulted in the need for snacks…
Two weekends ago we had a cookout, and I made a raw cheesecake, which required dates for the crust. I got a huge bag from Costco and barely made a dent in it with that one dessert, and I had no idea what to do with the leftovers. I decided to concoct a sort of Larabar type snack using the dates, nuts, and some other ingredients we had in out pantry. The result was very satisfying, and I am going to share it with you today 🙂
They may not look very pretty, but they are very easy to make and taste delicious. They are the perfect blend of sweet and salty, and are loaded with healthy fats and protein. They can be altered for different tastes too, such as adding dried cherries or apricots, and we made one batch using almond butter too! Be sure not to overindulge though, because they are pretty rich and dense in calories! Enjoy!
Date and Nut Snack Ball Recipe
25 pitted dates
1/2 cup raw almonds
1/2 cup raw cashew pieces
1/2 cup raw pepitas (shelled pumpkin seeds)
2 tsp coconut oil
1 T cocoa powder
1/2 tsp sea salt
1 tsp vanilla extract
1/3 cup slivered almonds
1/4 cup dark chocolate chips
Add all ingredients except the slivered almonds and chocolate chips to a food processor. Pulse for 1 minute, then process for an additional 1-2 minutes until all ingredients are combined into a crumbly mixture. The mixture will be done when it can be squeezed together and hold it’s shape. Once the mixture is processed, pour into a large mixing bowl. Stir in the chocolate chips and slivered almonds until evenly distributed. Using your hands, form the mixture into 1-2 inch sized balls. You will not be able to roll the mixture into balls, so squeeze the “dough” between you hands, applying pressure to form the ball. Place the balls in a lined dish and refrigerate for at least 10 minutes before indulging, and store in an airtight container in the fridge. (Recipe yields 12-16 balls).
