It’s finally time for the second edition of my Pinterest Wins series. These posts are about recipes I have found on Pinterest and have actually enjoyed to the point I would add them to my regular meal planning rotations. If you would like to see my first edition of this series, click here. Since I am on a Whole 30 right now, I thought that would be the best theme for this installment.
First up, we have breakfast. Egg cups can be made so many different ways, but I really enjoy these because the sausage makes them extra hearty. They are really easy to make and customize to your liking. They are a perfect grab and go breakfast or midday snack. Another nice thing about these is that you can make them in bulk and freeze them. When I am getting ready for work in the morning, I don’t have time to make breakfast. Having these guys around makes it much easier.
I have been craving buffalo chicken for a while now, and I finally fixed my craving the other night when making these bad boys. They were SO GOOD! I used almond flour instead of pork rinds for the coating, as I don’t like pork rinds, but I might try them next time as the almond flour didn’t get crispy enough. I loved how simple this recipe was to make, and she provides different measurements depending on you spice preference. Even my boyfriend liked them and he hates spicy food.
Up next is something that I think every single person in the Paleo world has raved about at some point. I don’t know what it is about this meal that is SO satisfying! You can personalize it to your liking with your favorite pizza toppings, and since it is packed with veggies, there is no guilt to be had. I like cooking meals that will last for a few lunches and dinners, and this is exactly one of those meals.
Is there anything better than a slow cooker meal? They are always so easy and delicious. I first saw this on Facebook and thought, wow, that looks easy AND Whole 30 compliant! I couldn’t wait to try them. I made my own taco seasoning using cumin, garlic powder, onion powder, coriander, chili powder, and salt and pepper. I also used pre-cut fire roasted peppers and onions from Trader Joes freezer section. They turned out great, and tasted delicious on some Julian Bakery Paleo Wraps with guacamole.
I have saved the best for last! THIS moussaka is UN-REAL. I absolutely love moussaka, and when I lived in New Jersey, I would get it at diners all of the time. Since moving to California, I haven’t been able to find a place that has it yet. I am so glad I found this recipe. I never thought I would be able to make moussaka, as it seemed so complicated, and I definitely did not think I would be able to make it Whole 30 compliant. This video made it so easy for me and the end product was delicious. I highly recommend you try this.
